For the Chicken and Marinade:
- 1.5 lb boneless and skinless chicken breasts or thighs

Step 1: Prepare the Marinade and Marinate the Chicken:

Afterwards, place your chicken in a shallow dish. Pour the marinade over your chicken and ensure that it is completely coated. Let it remain marinated at your room temperature for 15-20 minutes. For a more flavourful chicken, you can marinate the chicken inside the fridge for up to 4 hours.
Step 2: Create Your Cauliflower Rice:
You have to cut the cauliflower into florets that can fit into the feed tube to be processed with the food processor. Now fit the shredding disc inside Cuisinart’s processor and start adding the cauliflower florets inside the appliance for processing. Then, in less than a minute, you can get your soft and light cauliflower rice coming out of the processor.
Step 3: Cook the Segments:
Heat a skillet or grill pan at a medium temperature. Now discard the leftover marinade and cook the chicken for 6-7 minutes per side or until fully cooked. Then, transfer your chicken to a cutting board. And let the cooked chicken remain there for 5 minutes before slicing it into strips so that your chicken could avoid residual cooking and avoid being tough, less flavourful, and chewy due to the loss of juices caused by immediate cutting.
Now, in a large skillet, add some coconut oil and heat it at a medium temperature. Then, add your riced cauliflower and some salt inside the skillet. Sauté the entire material for 5-8 minutes. You have to stir the material occasionally as well until the material becomes tender. However, you should avoid overcooking your ingredients. Otherwise, these would become mushy.
Step 4: Prepare the Drizzle and Toppings:
If you intend to use a drizzle for your dish, then rinse the work bowl of your food processor. Now add your Greek yogurt, cilantro, lime juice, water, and salt inside the processor. Process the entire material until it becomes smooth and vibrant green. Afterwards, dice the mango. You can slice the avocado and bell pepper inside the processor after rinsing it. Next, thinly slice the red onion through the processor as well.
Step 5: Assemble Your Dish:
Divide the cauliflower rice among four bowls. Now top the bowls with the slices of the tropical grilled chicken. Arrange the avocado slices, mango cubes, bell pepper, red onion pieces, and black beans in the bowls. Afterwards, drizzle the cilantro-lime yogurt sauce in the bowls.
